Roast beef with mashed potatoes is probably one of our family favorites! This can be made in the oven or a slow cooker/crock pot. I love the Instant Pot because it’s quick & I can put it in frozen and not wait hours for it to be done. Give it a try. Only a few simple ingredients.
Instant Pot Beef Roast
2-2.5 lb. Beef roast
4 cups water
4.5 oz. Beef (or Brown) Gravy Mix
1 package (1 oz. ) dry Ranch Dressing mix
1/3 cup prepared Italian Dressing (or 1 pkg. dry Italian Dressing mix)
1. Mix water, gravy mix, ranch dressing mix & Italian dressing in bottom of Instant Pot.
2. Set to sealing & set for 50 minutes pressure. Allow a natural pressure release for 15-20 minutes, then release any pressure left and open Instant Pot. If gravy is too thin, make a slurry of 2 Tbsp water & 2 Tbsp corn starch & add to gravy. Turn to sauté and allow it to thicken while you stir it.
