Fixing a ‘side dish’ to have with an Entree is always a frustration. I know we get tired of our canned green beans & canned/frozen corn🧐. But the other evening I fried/baked pork chops and that’s when I remembered this recipe.
It’s easy and makes a great side dish ! But, I searched through my recipes & found this. I had forgotten completely about it! And when I decided to make it….alas….I had all the ingredients in my pantry cupboard. So I made these and my hubby and I ate every last chunk of Honey Roasted Sweet Potatoes.
What are some of the benefits of Sweet Potatoes? They are rich infiber, vitamins and minerals. They are also high in antioxidants that protect your body from free radical damage and chronic disease.
Honey Roasted Sweet Potatoes

2 large sweet potatoes, peeled

2 Tbsp. Honey
2 Tbsp. Olive Oil
1/2 tsp salt
1 tsp. Lemon Juice
1 tsp. Cinnamon
1. Cut sweet potatoes into 1 inch chunks and place in a bowl or ziplock bag
2. Add honey, olive oil, lemon juice, salt & cinnamon

3. Shake in bag or mix in bowl

4. Place on parchment or foil lined baking pan

5. Bake at 425 degrees for 20 minutes then turn them over or shake them on the pan and bake 15-20 minutes more, or until done.

Thank you for this! My husband doesn’t like sweet potatoes and I love them. I am going to try them in the air fryer.
