Instant Pot Wild Rice Chicken/Turkey Soup (great way to use leftover Turkey)

If you have turkey leftover from Thanksgiving, here is a great way to use it! This can be made stove top if you don’t have an Instant Pot.

The Instant Pot makes it quick because rice cooked on the stove takes awhile. It’s difficult to find just plain wild rice, near me, but I was able to get a Wild Rice Blend.

Instant Pot Wild Rice Chicken/Turkey Soup (great way to use leftover Turkey)

3 cups chicken (raw, shredded or cooked & cubed) or Turkey

1/4 cup chopped onion

1/4 cup chopped celery

1/4 chopped carrots

12 cups chicken broth (I made mine from powdered chicken base)

2 tsp pepper

3 tsp salt (or to your liking)

1 Tbsp minced garlic

2 Tbsp dried parsley

1 cup wild rice blend

1 tsp Thyme

1/4 cup butter, melted

1/2 cup flour

2 cups half & half, or evaporated milk, or 1/2 milk & 1/2 half & half

1. Add chicken, onions, celery, carrots, rice, broth, salt & pepper, parsley, garlic, and thyme to instant pot.

2. Stir well

3. Lock lid and set valve to ‘sealing’

4. Set for 25 minutes on pressure

5. When done, do a natural release for 10 minutes, then move valve to ‘venting’ until pressure is released

6. Remove lid & stir well

7. Melt 1/2 stick of butter (1/4 cup) in the microwave

8. Stir, or use whisk, and blend flour into melted butter. Mixture will be very thick

9. Ladle in broth from the soup and continue to whisk until creamy

10. Turn instant pot to ‘sauté’ and stir in the thickening

11. While soup is thickening, add the milk or half & half (I used 1 cup half & half & 1 cup milk)

12. Enjoy!
