Debbie’s Double Chocolate Brownie Bites

1 stick + 2 Tbsp. (10 Tbsp.) butter

1 cup white sugar

1/4 tsp. Salt

3/4 cup baking cocoa

2 tsp vanilla

1/2 cup flour

2 eggs

1/2 cup Chocolate Chips (I use semi-sweet)

1. Melt butter in a bowl in the microwave.

2. Remive from microwave and add cocoa, sugar & salt. Mix well with a spoon.

3. Add vanilla & eggs & stir until well mixed.

4. Add flour & chocolate chips and stir until all ingredients are combined.

5. Spray a mini muffin pan & add approximately 2 Tbsp of the mix ( I used a small cookie scoop). This makes 24 mini muffins.

6. Bake at 350 for 13-14 minutes.

7. Remove from oven to a wire rack for 3-5 minutes then remove from muffin pan. Note: nuts could be added but are optional.

Chipped Beef Gravy

This was definitely ’Comfort Food’ when I was growing up! Mother could stretch it to feed all 8 of us and we loved it. Just a few ingredients and it was….and still is, delicious and satisfying. Eat it on toast, biscuits, mashed potatoes or however you choose.

3 (2 oz) packages Chipped Beef
1/2 cup (1stick) butter
1/3 cup flour
1/2 tsp salt
1/2 tsp pepper
3 cups milk

1. Melt butter in skillet then add cut up chopped beef.

2. Add flour and allow it to thicken.

3 .Slowly add milk and allow it to thicken after each addition.

4. Add salt and pepper

5. Serve on toasted bread, mashed potatoes, biscuits or however you like.

Cooking At It’s Best

Cooking at it’s best, is when it is simple and down to earth. That’s the kind of eating I grew up with. Being raised in a family of eight, six children and our parents, most of our meals were simple but delicious. We always had a large garden and Mother did a lot of canning and preserving. Most of our meals included food from the, jars in the basement! i started cooking at a young age and I especially love ’Comfort Foods’. I’d like to think that my recipes will bring back memories from your childhood.

Thank you for viewing my page! Let me introduce myself. My name is Debbie and I have been cooking since a very young age. There were six children in our family and all of us had chores to do to keep things running smoothly. My Dad was a minister so we had people into our home for meals, frequently. Being next to the oldest, I did a lot of cooking with my mother’s help and direction. And she was a fabulous cook!!

When I graduated from high school I attended and completed a nursing degree. So I have been a nurse for 48 years. My husband is a minister and we have done much entertaining in our home over the last 47 years. So my love for cooking has grown and comes in handy.

I consider one of my greatest accomplishments to be raising 2 sons. Both are grown and married, and they each have 3 children. That gives me six beautiful grandchildren. Sometime I’ll tell you all about them….I happen to be proud of them❤️

So, I have decided to share my love of cooking and baking with you! I will post 2-3 times a week, definitely on Tuesday & Friday & maybe a day in between…..depending on our schedule. please follow, like & share my posts!!
