Butternut Squash Soup

This is a hearty soup that is sure to warm you up on a cold winter day! It’s easy to make & quick to cook in your Instant Pot.

This can be made on the stove if you don’t have an Instant Pot. whatever way you make it, it’s guaranteed to be yummy❤️

Butternut Squash Soup

1-2 Tbsp Olive Oil

4 slices cooked, cut up bacon

1 small onion, chopped

1 Tbsp minced garlic

3 cups Chicken broth

2 cups Apple Cider (NOT apple cider vinegar)

4 cups Butternut Squash, cut into 1 inch squares

2 apples, peeled & cut up

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ginger

1 tsp salt

1/2 tsp pepper

1/2 cup sour cream

1. Set Instant Pot to sauté and allow it to heat with 1-2 Tbsp Olive Oil

2. Add cut up bacon to the hot olive oil and sauté until done

3. Remove bacon from instant pot and drain on paper towels ( this can be used as a garnish. We just want the flavor of the bacon)

4. To the oil & bacon drippings in the Instant pot, add the chopped onion and minced garlic. Sauté until onion is translucent.

5. Add the chicken broth, cider, squash & apples and stir well

6. Add the spices & stir well

7. Place lid on instant pot and set to ‘sealing’ for 15 minutes

8. Allow a natural release for 15 minutes and then a rapid release

9. Using an immersion blender (or a regular blender using caution as it is very hot!) blend the soup until smooth

10. Add the sour cream and blend again

11. Serve with the bacon as a garnish

Meat Fondue Meal

This would be great for New Years! This our Christmas Tradition and it’s delicious! Doing the meat ahead, & having the veggies all cut, makes it go faster.

It takes awhile to eat, so don’t get in a hurry! Everyone cooks their meat and veggies, in skewers, to their desired liking.

It’s a great time to talk & visit and ‘catch-up’ on everyone’s lives. So, relax & enjoy❤️

Meat Fondue Meal

Steak, Chicken, Pork (amounts according to how many you are feeding)

Peanut Oil

Meat Marinade: (I doubled this for 12 people)

1 cup grapefruit, apple or lemon juice (I like to use Pineapple juice)

1/2 cup Corn Syrup or honey

1/3 cup Worcestershire Sauce

1/4 cup A-1 Steak Sauce (or any brand)

1/2 cup BBQ sauce

1/3 cup oil (I use olive oil)

1/2 tsp. Ginger


Cut green pepper & onion into chunks

Cut mushrooms in half unless they are small

1. Cut meat in chunks and place in seperate bowls (or ziplock bags)

2. Make marinade & pour over the meats.

3. Allow meat to marinade for 8-12 hours

4. Drain meats and place in serving bowls

5. Cut up veggies and place in serving bowls

6. Heat 3 cups peanut oil in each fondue pot.

7. When hot enough place pieces of meat and veggies on skewers and cook in peanut oil.

8. Note: I usually serve a potato casserole, salad, and rolls with this meal.

Strawberry Fluff

This was a real hit at our family Christmas! The fresh strawberries were so good. It’s easy to make and if you like strawberries, you’ll love this.

Strawberry Fluff

4.6 oz Cook & Serve Vanilla Pudding mix

6 oz. Strawberry Jello mix

3 cups of water

16 oz Cool Whip

2 cups miniature Marshmallows

2 cups Strawberries, sliced

1. Place pudding mix & jello mix in a saucepan

2. Add 3 cups water & mix well

3. Cook until mixture comes to a boil

4. Remove from and pour into a large mixing

5. Allow it to cool and then place in refrigerator for 4-6 hours

6. With a hand mixer, mix pudding and jello until smooth

7. Stir in cool whip, marshmallows & sliced strawberries.

8. Place in serving bowl and refrigerate until ready to serve

Bacon Ranch Cheese Ball

Here is a s a great snack for New Years Eve!

Just make the cheeseball, get some crackers, and enjoy! This a an original recipe. Enjoy!

Bacon Ranch Cheese Ball

8 oz. Cream Cheese, room temperature

1/3 cup Sour Cream

1/2 cup Bacon Bits, or cooked cut up bacon

1 Tbsp. Ranch Dressing Mix

1-1/2 cups shredded Cheddar Cheese

1/4 tsp. Garlic Powder

2 tsp. Minced onion

1/2 cup chopped Pecans

1/2 cup Sliced Almonds

1. Place softened cream cheese in a mixing bowl

2. Add the sour cream and mix well with a hand mixer

3. Add bacon, ranch dressing mix, garlic, onion & cheddar cheese

4. Mix with mixer until combined

5. Refrigerate for about an hour

6. On a piece of foil, place the pecans & almonds

7. Remove cheese mixture from bowl and place on a piece of plastic wrap

8. With the plastic wrap, form a ball

9. Place cheese ball on the nuts and roll to cover

10. Refrigerate until an hour before you are ready to serve it

11. Get some crackers and enjoy🎄

Jiffy Swedish Tea Ring (Sweet Rolls)

Every Christmas my mom made, what she called, a Swedish Tea Ring. She only made it for this holiday, and I’m not sure why. We all loved it❤️. Especially with a hot cup of coffee or hot chocolate.

It is basically a Cinnamon Roll that you form into a circle and cut, to make the ring. Sometimes she put nuts & raisins in it, and other times just the brown sugar and cinnamon.

Jiffy Swedish Tea Ring

4-5 cups all purpose flour

1 box Jiffy (9oz) white/yellow cake mix

2 pkg. (1/4 oz each) Quick-Rise Yeast

1 so. Salt

2 cups warm water (120-130 degrees)

2 Tbsp Butter (room temperature)

1/2 cup Brown Sugar

2-2 1/2 tsp. Cinnamon

1. Place 3 cups flour, cake mix, yeast, salt in a mixing bowl and stir to mix.

2. Add warm water & mix with paddle attachment until we’ll blended

3. Switch to dough hooks & add 1 cup more of flour. Mix until smooth.

4. Add more flour as needed to form a soft dough (I needed a total of 4 1/2 cups flour).

5. Turn out dough onto a floured surface & knead several times.

6. Roll dough into a rectangle approximately 9×18 inches

7. Spread 2 Tbsp soft butter onto dough

8. Mix brown sugar and cinnamon together and spread on dough

9. Roll dough into a log

10. Form dough into a circle and attack dough from both ends

11. Cut about 1-1 & 1/4 inch rolls, but not cutting clear through

12. Pull each section out and twist, overlapping each other.

13. Bake at 350 degrees for 20-25 minutes

14. Cool on rack

15. Frost with icing/glaze of you choice

Cranberry Orange Scones

Somehow, in my mind, Cranberry Orange just goes with Christmas! These are so delicious and you get a good taste of both Orange & Cranberry.

Warning: you can easily become addicted 😎

Cranberry Orange Scones

(Try them with a cup of coffee☕️)

2-1/4 cups all-purpose flour

1/2 cup sugar

1/2 tsp. Salt

3 tsp. Baking Powder

1 tsp. Baking soda

1/2 cup Butter (cubed & chilled)

1/4-1/3 cup Half & Half or Heavy Cream

1/2 cup Sour Cream

1 egg

1 tsp. Vanilla

1-1/2 Tbsp. Fresh grated Orange zest

1/2 cup Sweetened Dried Cranberries

Pre-bake topping:

2 Tbsp. Sliced Almonds, roughly broken

1 egg

1 tsp. Water

Sanding sugar (Turbinado sugar) larger crystals


1 cup Powdered Sugar

2 Tbsp. Fresh orange juice

1 tsp. Freshly grated Orange zest

1. Preheat oven to 375 degrees. Line large baking sheet with parchment paper (I used my large baking stone)

2. In a mixing bowl whisk together the flour, sugar, baking powder, baking soda & salt

3. Add the cubed butter and mix with pastry blender until it resembles cornmeal

4. Add the cranberries and stir into the dry ingredients. Make a well in the center of the dry ingredients

5. In a separate bowl whisk together the sour cream, half & half, egg, vanilla & orange zest. Add to the well in the dry ingredients.

6. Stir until mixed well.

7. Place dough onto a floured surface and knead a few times

8. Pat the dough into an 8 inch circle and cut into 8 pie shapes

9. Place on parchment lined baking pan

10. Mix the egg with the teaspoon water & brush onto scones

11. Sprinkle with broken almonds and sugar

12. Bake for 20-22 minutes

13. Remove to cooling rack

14. Mix the glaze ingredients and drizzle over warm scones

15. Enjoy!!

Cheeseburger Sliders

Are you looking for some easy sandwiches? I know I look for easy but tasty things to make, when I’m busy preparing for Christmas.

This recipe will not disappoint. It can be made ahead, as long as the meat mixture has cooled. Cover with foil & refrigerate. When you’re ready to bake them, brush with melted butter & whatever slices you want.

These would even be good for a New Years snack!

Cheeseburger Sliders

1-1/2 pounds cooked crumbled burger

1/2 tsp salt

1/2 tsp pepper

2 tsp minced onion

1 tsp minced garlic

1/2 cup BBQ sauce

3 oz Cream Cheese (cut-up)

2 tsp Worcestershire Sauce

2 tsp Dijon mustard (I used honey mustard)

2 cups shredded cheese or enough slices of cheese to put on the bottom & top of how ever many you make

1/2 cup butter (melted)

1 Tbsp Garlic Powder, onion powder, or any spices you like

1. Brown ground beef and crumble as it cooks

2. Drain any grease or liquid in the fry pan (I put mine in a strainer)

3. To the cooked burger add minced onion & garlic, salt & pepper, cream cheese, BBQ sauce, mustard & Worcestershire sauce.

4. Cook and stir until mixed well

5. Slice the tops off the rolls horizontally and set tops aside

6. Put bottoms of rolls in sprayed 9x 13 inch baking pan

7. Place 1 cup shredded cheese or slices of cheese on the bottoms

8. Add beef mixture and spread evenly on the bottom rolls

9. Add remaining cheese slices or 1 cup shredded cheese over all

10. Place tops of rolls back in place

11. Melt butter in microwave and add 1 Tbsp garlic. Stir well

12. Pour butter over rolls or use pastry brush

13. Cover with foil and bake @375 degrees for 20 minutes. Remove foil & bake for an additional 10 minutes, and the rolls are browned.

14. NOTE: you can add pickles, mustard, ketchup, mayo…..whatever you want.

Christmas Tree Cake

The cake for this tree is a homemade cake recipe of my mother’s called ‘Western Fudge Cake!’ And it is easy & good. But you can use a cake mix to make it quicker.

I started making this at Christmas when our boys were little. So I decided to make it this year, and it was good!

Christmas Tree Cake (Western Fudge Cake)


3/4 cup butter (room temperature)

2 cups sugar

1-1/2 tsp. Vanilla Flavoring

3 eggs

1/2 cup baking Cocoa

3 cups all-purpose flour

1-1/2 tsp. Baking Soda

3/4 tsp. Salt

1-1/2 cups ice water


3 Tbsp softened butter

2 Tbsp vegetable shortening

4-1/2 cups Powdered Sugar

1/4-1/2 cup whole milk (I used half & half)

1/2 tsp. Vanilla

Food coloring

To tint coconut: place desired amount of coconut in a ziplock bag along with 2 drops f food coloring. Shake until food coloring is on all the coconut.

1. Preheat oven to 350 degrees and spray or grease a 9×13 inch pan.

2. Mix butter, sugar, vanilla and eggs until smooth & creamy

3. Add the Cocoa and mix again until creamy

4. Mix flour, baking soda & salt together

5. Add flour mixture alternating with the ice water, into the cocoa mixture, until well mixed

6. Pour into the prepared pan and bake for 35-40 minutes.

7. Cool in pan for 15 minutes then out of the pan on a cooling rack until completely cool.

8. Cut the cake into tree shape as shown in the video and freeze (optional) before decorating.

9. Mix the icing ingredients and tint to a green color (you decide how green)

10. Leave solid tree shape as bottom layer

11. Cover with a thin layer of icing

12. Place 2 pieces together on top of bottom layer and secure with toothpicks

13. Put icing all over the cake top & sides (it need not be smooth and perfect, after all it’s a tree!!)

14. Decorate with green tinted coconut (optional) and any decorations you wish.

15. Use a couple small chocolate candy bars as the bottom of the trunk

16. If transporting cake, freeze until ready to go, or at least in time to serve it!

Crock Pot Peanut Clusters

Peanut Clusters are my very favorite Candy! so making a big batch like this is a good thing! Don’t skim and use the cheapest chocolate. I’m so glad I didn’t because these are the best.

Now, how to stray out of them, is the big question?? I simply love them. I hope you’ll try them soon. Just remember to stir it or you could burn the chocolate. Merry Christmas 🎄🎄

Crock Pot Peanut Clusters

2 pounds white Almond Bark

1 Sweet German Chocolate Bar (4oz)

2 cups semi sweet Chocolate Chips (I used Dark Chocolate Chips)

1 jar unsalted Dry Roasted Peanuts (16oz)

1 jar salted Dry Roasted Peanuts (16 oz)

1. Place Almond Bark, German Chocolate Bar & chocolate chips in crock pot/slow cooker

2. Set on ‘low’ and put lid on crock pot

3. Cook on low and stir frequently until all chocolate is melted and mixture is smooth

4. Add both jars of peanuts

8. Allow to cool completely. If your like me, I got anxious to eat one, so I cooled them in the refrigerator 😎

5. Stir until all peanuts are chocolate covered

6. Turn crock pot off

7. Scoop spoonfuls onto parchment paper lined baking sheets, or use small muffin papers like I did

9. NOTE: this makes 75-100 peanut clusters…..which is really no problem❤️

Old Fashioned Date Nut Bars (My mom’s recipe)

As far back as I can remember, the one time a year we had these was Christmas. Mom always made them and I loved them.

So, Christmas will be here before we know it, and it’s time to make Date Nut Bars. This recipe is very old & difficult to read. But, I can read it enough to make a batch, and I rewrote it for future generations!!

Old Fashioned Date Nut Bars (my Mom’s recipe)


2 cups chopped pitted dates

1/3 cup brown sugar

1-1/4 cups water

1 tsp. Vanilla

1/2 cup chopped nuts


1-3/4 cups old Fashioned Oats

1-1/2 cups all purpose flour

1 cup packed Brown Sugar

1 tsp. Baking Soda

3/4 cup melted Butter

1. Preheat oven to 350 degrees and lightly spray a 9×13 baking pan.

2. Combine the dates, brown sugar & water in a pan. Stir well & bring to a boil

3. Stir frequently until mixture is thickened.

4. Add the chopped nuts and vanilla. Stir & set aside

5. For the crust: in a mixing bowl, combine the oats, flour, brown sugar & baking soda.

6. Add the melted butter and stir until crumbly.

7. Place 1/2 of the crust mixture in the bottom of the sprayed baking pan, pleasing it down.

8. Spread the date mixture onto the crust and spread to within 1/4 inch of the edge of the pan

9. Place the remaining crust mixture on top of the date mixture and pat it down lightly

10. Bake at 350 degrees for 25-30 minutes, until lightly browned.

11. Cool completely before cutting into squares.
